Oysters with Sparkling Wine and Spring Onion

Instructions:

Step 1: Preparing the Spring Onion
Start by preparing the spring onion. Slice off the bottom part, then cut off the green part where it begins to toughen. The tender white section is where weโ€™ll focus. Slice it vertically, peel off any outer skin, and rinse the inside if necessary. Finely chop the tender white part and place it in a bowl. Keep the green tops aside for later use.

Step 2: Preparing the Green Tops
Next, take the green tops of the spring onion that youโ€™ve set aside. Slice them into 3-4 cm pieces. Cut them lengthwise in half, then slice into fine matchsticks. Place these matchsticks in a bowl of ice water so that they curl slightly, adding a lovely texture and look. Set them aside for decoration later.

Step 3: Cooking the Spring Onion
In a small saucepan, melt the butter over low heat. Add the finely chopped spring onion and cook for about 10 minutes, stirring occasionally, until it becomes soft and translucent. Once itโ€™s cooked down, pour in the sparkling wine and let it simmer for a few more minutes. Once the wine has reduced, transfer the mixture to a blender and blend until smooth. Step 6: Assembling the Dish
Now, itโ€™s time to assemble the oysters. First, spoon a small amount of the toasted breadcrumb mixture onto one side of each open oyster. Next, drizzle some of the sparkling wine and spring onion cream over the breadcrumbs. For an extra pop of color and flavor, garnish each oyster with the crispy, curled green onion matchsticks you prepared earlier. Add a light sprinkle of freshly ground pink pepper to finish.
