Ingredients:
- 1 tablespoon olive oil 🫒
- 1 cooking onion, finely chopped 🧅
- 4 ripe tomatoes, diced 🍅
- 3 carrots, peeled and sliced 🥕
- 4 cups red kidney beans, cooked or canned 🥫
- 1/2 cup tomato sauce 🍅
- 1/2 cup fresh lemon juice 🍋
- 1 tablespoon whole cumin seed

Sauté Carrots: Heat olive oil in a large pot over medium heat. Add the sliced carrots and sauté for about 6 minutes, stirring occasionally. If needed, add a splash of water to prevent sticking and promote even cooking.

Add Onion: Stir in the chopped onion and continue to sauté for a couple of minutes until softened and translucent.

Incorporate Ingredients: Now, it’s time to add the diced tomatoes, cooked red kidney beans, tomato sauce, fresh lemon juice, and whole cumin seed to the pot. Increase the heat to high and bring the mixture to a boil.
