Instructions

  1. Begin by washing and soaking the basmati rice for approximately 30 minutes, ensuring it absorbs water for optimal cooking.
  2. While the rice soaks, peel and chop the potatoes and onion, and finely slice the green chilies to prepare your vegetables.
  3. In a small bowl, combine the chili powder, cumin powder, coriander powder, garam masala, and yogurt to create a spice mixture that will elevate the dish’s flavor.
  4. In a large pot, heat a couple of tablespoons of oil over medium heat, adding the onions once hot. Sauté them until they are light brown and aromatic.
  5. Incorporate the ginger, garlic paste, and green chilies into the pot, continuing to sauté until everything is nicely browned and fragrant.
  6. Introduce the prepared spice mixture to the pot and sauté for an additional 5 minutes, adding a splash of water if necessary to prevent burning.
  7. Add the chopped potatoes, peas, and soaked rice to the pot, gently stirring to combine all the ingredients and letting them sauté together for a few minutes.
  8. Pour in 4 cups of water, bringing the mixture to a vigorous boil before reducing the heat to low.
  9. Cover the pot with a lid and allow it to simmer until the rice is fully cooked and the water has been absorbed, approximately 20-25 minutes.
  10. Once cooked, remove the pot from heat and fluff the rice with a fork. Garnish with fresh coriander and fried cashew nuts for added texture and flavor.
