Ingredients
- 2 tsp anise seed
- 1 tsp fennel seed

- 2 1/2 lbs beef (round cut)

- 2 onions

- 2 celery stalks
- 2 parsnips
- 2 cups green beans
- 1 cup mushrooms
- 1 1/4 cups beef broth
- 7 cups chicken broth
- 2 cups dry red wine
- Fresh parsley, for garnish

Prepare Marinade: In a mortar, pound coriander seeds, then add the remaining spices and seasonings. Transfer the mixture to a bowl and stir in the white wine.

Marinate Beef: Place the beef in a large ziplock bag and pour the marinade over it. Seal the bag, removing excess air, and massage the marinade into the beef. Refrigerate for about 24 hours, turning occasionally.

Preheat Oven: Preheat the oven to 300°F (150°C).

Sauté Vegetables: Heat olive oil in a deep casserole dish. Add onions, carrots, celery, parsnips, green beans, and mushrooms. Cook over gentle heat for 15 to 20 minutes until they begin to soften.
