Spiced Cabbage Rice (Patta Gobhi Pulao) Recipe

Soy chunks 1/2 cup, soaked in water
Cumin seeds 1 tsp
Bay leaves 2 leaves
Cinnamon stick 1 inch
Cloves 1
Turmeric powder 1 tsp
Red chili powder 1 tsp
Black pepper powder 1 tsp
Onion (finely chopped) 1 medium
Ginger (grated) 1 inch
Garlic (finely chopped) 1 clove
Green chilies (finely chopped) 2
Fresh coriander (chopped) 4 sprigs
Ghee (clarified butter) 1 tbsp
Oil As needed
Salt To taste

Cooking Time: 45 minutes

Instructions:

  1. Prepare the Spices and Vegetables:

    • Heat ghee in a large pan or wok. Once hot, add cumin seeds, bay leaves, cinnamon stick, and cloves. Let them splutter for about 30 seconds, releasing their flavors.
    • Add chopped onions, grated ginger, chopped garlic, and green chilies to the pan. Sauté until the onions turn soft and translucent.
  2. Cook the Cabbage and Soy Chunks:

    • Once the onions are soft, add the finely chopped cabbage and soaked soy chunks. Stir well to combine, and cook until the cabbage softens, about 5-7 minutes.
  3. Add the Spices:

    • Sprinkle turmeric powder, red chili powder, and black pepper powder into the mixture. Stir everything together, allowing the spices to blend into the cabbage mixture.
  4. Cook the Rice:

    • Add the cooked rice into the pan along with fresh coriander and salt to taste. Gently mix everything together to ensure the spices and cabbage are evenly distributed throughout the rice.
    • Drizzle a bit more ghee on top and cook for another 2-3 minutes, allowing the flavors to combine and the rice to heat through.
  5. Serve:

    • Serve the Spiced Cabbage Rice hot, garnished with additional fresh coriander if desired.
    • It pairs wonderfully with a side of tempered yogurt (raita) and crispy papad, making it a satisfying meal for lunch.
