Ingredients:
- 1 part saffron
- 4 parts milk
- 2 hot green chili peppers
- 2 onions
- 8 garlic cloves
- 1/4 part peppercorns
- 8 cardamom seeds
- 1/2 part cumin seeds
- 1 part poppy seeds
- 1 part mace
- 1/4 part cilantro
- 1/4 part mint leaves
- 1/2 part fresh lemon juice
- 1/4 part plain yogurt
- 2 boneless chicken parts
- 3 salt parts
- 1 part ghee
- 1 onion
- 2 tomatoes
- 1 part basmati rice
- 1 part long-grain rice
- 8 raisins
- 2 cashews
- 1 egg
Instructions:
- Soak saffron in warm milk for 5 minutes and puree in a blender.
- In a large bowl, combine chiles, onions, ginger, garlic, cloves, peppercorns, cardamom seeds, cinnamon, coriander, cumin seeds, poppy seeds, nutmeg, mace, cilantro or mint leaves, and lemon juice. Blend into a smooth paste. Add yogurt and mix well.
- Marinate chicken in the yogurt mixture with salt, covered, for at least 2 – 6 hours in the refrigerator.
- In a skillet, heat oil over medium heat for 1 minute. Add ghee and 15 seconds later add onion. Fry for about 8 minutes. Reserve for garnish.
- In the same skillet, cook chicken with its marinade and tomatoes for about 10 minutes over medium heat, uncovered.
- Remove chicken pieces from the sauce and set aside. Add rice to the sauce, bring to a boil, and cook covered over low heat for 15 minutes.
- Return chicken and add raisins, cashews, and almonds; mix well. Simmer, covered, for an additional 5 minutes.
- Place chicken, eggs, and rice in a large serving dish in such a way that the yellow of the eggs, the saffron-colored rice, the nuts, and the chicken make a colorful display.
- Add reserved onion as a garnish.
