Instructions

To prepare these flavorful Chicken Keema Sliders, begin by toasting the spices. In a dry pan over medium heat, combine the cumin seeds, cinnamon sticks, cloves, whole black pepper, coriander seeds, star anise, and dried Kashmiri red chilies. Sautรฉ them for approximately 3 to 4 minutes until fragrant, being careful not to burn them. Once toasted, transfer the spices to a bowl and allow them to cool. After cooling, grind the toasted spices in a mixer or spice grinder until they form a fine powder. Set this ground spice mix aside for later use.

Next, heat a tablespoon of oil in a large pan over medium heat. Once the oil is hot, add the finely chopped onions, grated ginger, minced garlic, and slit green chilies. Sautรฉ the mixture until the onions turn soft and begin to caramelize, which should take about 5 to 7 minutes.

Once the onions are nicely browned, add the previously ground spice mix to the pan and stir well, allowing the spices to infuse their flavors into the onion mixture. After about 1 minute, add the chopped tomatoes and a splash of water to help them cook down. Continue to sautรฉ until the tomatoes have softened, which will take roughly 10 minutes.

After the tomatoes have cooked down, stir in the yogurt and mix thoroughly to combine all the ingredients. Allow this mixture to simmer for 2 minutes to let the flavors meld. Now, it’s time to add the minced chicken to the pan. Stir it in well, making sure the chicken is coated with the spice and yogurt mixture. Cook the chicken for about 10 to 15 minutes until it is fully cooked through, stirring occasionally.

Once the chicken is cooked, squeeze in the fresh lemon juice and give the mixture a good stir. Finally, remove the pan from the heat and garnish the Chicken Keema with freshly chopped coriander leaves for an added burst of flavor.

While the keema is cooling slightly, heat a flat skillet or griddle over medium heat. Add butter to the skillet, allowing it to melt and coat the surface. Take the slider buns and place them in the skillet to toast, turning them occasionally until they are golden and crisp on all sides.

To assemble the sliders, take the toasted buns and generously fill each with the flavorful chicken keema mixture. Serve these delectable Chicken Keema Sliders warm, accompanied by a refreshing coriander mint chutney and a steaming cup of masala tea, making for an inviting evening snack or appetizer. Enjoy the vibrant flavors and the delightful experience these sliders bring to your table!
