Instructions

  1. Prepare the Chicken: In a 4-quart pot, simmer the chicken thighs in 4 cups of water, covered, until tender, about 30 minutes.

  2. Cool and Debone: Remove the chicken thighs from the pot, allow them to cool, then debone and chop the meat and skin coarsely. Reserve the stock in the pot.

  3. Saute Aromatics: In a large frying pan, heat the ghee and butter over medium heat. Add minced garlic, chopped onion, diced celery, and carrots. Saute until the onion is tender.

  4. Combine Ingredients: Transfer the sauteed mixture to the pot with the reserved chicken stock. Add an additional 4 cups of water to the pot along with turmeric, red pepper flakes, cumin, cardamom, dried ginger, and salt.

  5. Simmer the Soup: Cover the pot and simmer for 30 minutes, allowing the flavors to meld together.

  6. Add Chicken: Add the deboned and chopped chicken back into the pot. Simmer for an additional 5 minutes to heat the chicken through.

  7. Garnish and Serve: Stir in chopped fresh coriander and season with freshly ground black pepper according to taste preferences. Serve hot and enjoy the comforting flavors of this Chicken Mulligatawny Soup.
