Instructions

  1. Preparation of Rajma: Start by washing the rajma thoroughly and soaking it overnight. This step is crucial for the beans to soften adequately. Once soaked, pressure cook the rajma with enough water for about six whistles, then reduce the heat to low and continue cooking for an additional 15 to 20 minutes. After this, turn off the heat and allow the pressure to release naturally.

  2. Sautéing Aromatics: In a heavy-bottomed pan, heat the ghee and add the bay leaf to infuse its flavor. Next, incorporate the finely chopped onion, ginger, and pounded garlic, sautéing them until the onion turns a lovely golden brown.

  3. Cooking the Masala: Add the tomato puree to the pan and let it cook until the masala is well-prepared; this should take about 3 to 4 minutes. You’ll know it’s ready when the mixture begins to thicken.

  4. Spicing It Up: Now, add the coriander, turmeric, red chilli powder, garam masala, dry ginger, and black pepper powder. Sauté these spices together until the ghee separates from the masala, which typically takes around 2 minutes.

  5. Combining Rajma: Introduce the boiled rajma into the pan, adding sufficient water to reach your desired consistency. Season the mixture with salt to taste. Allow the Adraki Rajma Masala to simmer for 10 to 15 minutes, letting the flavors meld beautifully.

  6. Final Touches: Once the masala has thickened slightly, garnish with freshly chopped coriander leaves. Before serving, taste and adjust the salt and spices as needed.
