  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • Powdered sugar (for dusting)

Instructions:

  1. Begin by melting the shortening in a small saucepan over low heat. Once melted, remove it from the heat and stir in the brown sugar, molasses, and dark corn syrup. Set this mixture aside to cool.

  2. In a large bowl, combine 1 1/2 cups of flour with the ginger, baking soda, cinnamon, and cloves.

  3. Beat the shortening mixture into the dry ingredients until well combined. Gradually add in the remaining 1/4 cup of flour to form a stiff dough.

  4. Transfer the dough onto a lightly floured surface and knead it, adding more flour if necessary to prevent sticking. Divide the dough into 2 discs, wrap them in plastic wrap, and refrigerate for at least 30 minutes until firm.
