Indian Corn Pilaf Recipe

Ingredients:

  • 1 tbsp olive oil
  • 1/2 tsp cumin seeds
  • 2 cinnamon sticks
  • 4-5 cardamom pods
  • 1 cup basmati rice
  • 2 1/4 cups vegetable stock
  • 3/4 cup corn kernels
  • Salt, to taste

Instructions:

  1. Prepare the Spices and Rice:

    • Heat olive oil in a medium saucepan over medium heat.
    • Add cumin seeds, cinnamon sticks, and cardamom pods. Cook, stirring often, until the cumin seeds are lightly browned, about 1 minute.
  2. Cook the Rice:

    • Add the basmati rice to the saucepan and stir to coat with the spices.
    • Pour in the vegetable stock. Cover the saucepan and bring to a boil.
  3. Simmer:

    • Once boiling, reduce the heat to low and simmer covered until all the liquid is absorbed and the rice is tender, about 15 minutes.
  4. Add Corn:

    • Stir in the corn kernels, cover again, and cook until the corn is heated through, about 2 minutes.
  5. Season and Serve:

    • Season the pilaf with salt according to your taste.
    • Fluff the pilaf with a fork before serving.
