Coriander (Dhania) Leaves A handful
Green Chillies 1-2, sliced

Instructions

  1. Prepare the Rice and Dal: Begin by thoroughly washing and rinsing the rice and moong dal together. After washing, soak them in water for about 30 minutes. This will ensure that the grains cook evenly and the texture of the Khichdi is soft.

  2. Heat the Ghee: In a pressure cooker, heat 1 tablespoon of ghee on medium heat. Once the ghee is warm, add cumin seeds. Allow them to sputter slightly.

  3. Add the Whole Spices: Immediately, add the bay leaf, dry red chillies, cardamom pods, cinnamon stick, grated ginger, and asafoetida to the hot ghee. Sauté for 10 to 15 seconds until the spices release their aroma.

  4. Saute Rice and Moong Dal: Add the drained rice and moong dal mixture to the pressure cooker. Stir them well, letting them sauté in the ghee and spices for a minute or two. This step adds a rich flavor and depth to the Khichdi.

  5. Cook the Khichdi: Pour 3 cups of water into the cooker. Add the turmeric powder and salt to taste. Mix everything well. Close the pressure cooker with the lid, and cook on medium heat until the first whistle is heard. Once the whistle blows, reduce the heat to low and cook for an additional 5 minutes.

  6. Allow the Pressure to Release: After 5 minutes, turn off the heat. Let the pressure release naturally before opening the cooker lid.

  7. Final Touches and Garnishing: Once the lid is open, fluff the Khichdi with a fork and transfer it to a serving bowl. For extra richness, drizzle a little more ghee on top.

  8. Garnish and Serve: Garnish the Khichdi with fresh coriander leaves, sliced green chillies, and a few wedges of lime for a tangy touch. Serve hot with a side of Pudina & Dhaniya Raita and Aam Ka Achaar for a comforting and wholesome meal.
