  1. Prepare the Moong Dal: Begin by washing the yellow moong dal thoroughly under cold water. Soak the dal in water for about 30 minutes to soften it. Once soaked, drain the water and set the dal aside.

  2. Prep the Vegetables: While the dal is soaking, chop the cucumber finely and grate the carrot. Grate the fresh coconut as well. Set all the vegetables aside.

  3. Tempering: Heat a skillet or frying pan over medium heat and add the oil. Once the oil is hot, add the mustard seeds and allow them to splutter. Then, add the slit green chilies, asafoetida, and curry leaves. Sauté for a minute or until the spices release their fragrance.
