Instructions

  1. Mix the Dry Ingredients
In a large mixing bowl, combine all the flours (wheat, corn, oatmeal, millet, and ragi) along with red chili powder, coriander powder, turmeric powder, flaxseed powder, ajwain, kasuri methi, and salt. Mix thoroughly to ensure the spices are evenly distributed.

  2. Knead the Dough
Gradually add water to the dry mixture and knead it into a smooth, pliable dough. Once the dough is ready, drizzle 1 teaspoon of ghee or oil over it and knead for an additional 2-3 minutes. Cover the dough and let it rest for 10 minutes.

  3. Divide the Dough
Divide the dough into 10 equal portions. Roll each portion into a ball and dust it lightly with dry wheat flour.

  4. Roll the Rotis
Using a rolling pin, flatten each dough ball into a thin disc. The thickness of the roti depends on your preference, but thinner rotis will be crispier.

  5. Cook the Rotis
Heat a flat griddle or tawa over medium heat. Place one rolled roti on the hot surface and let it cook for 1-2 minutes until you notice bubbles forming. Flip the roti and cook the other side for another minute.

  6. Add Ghee or Oil
Apply a small amount of ghee or oil on both sides of the roti and press gently with a spatula to ensure even cooking. Cook until both sides are golden brown and crisp.

  7. Repeat and Serve
Remove the cooked roti from the griddle and repeat the process with the remaining dough. Serve the hot Masala Rotis with Jeera Potatoes for a hearty breakfast or pair them with Palak Raita and Salad for a balanced dinner.
