Instructions

Step 1: Preparing the Dough

  1. In a large mixing bowl, combine the whole wheat flour, salt, and oil.
  2. Gradually add water, little by little, and knead the mixture into a smooth and soft dough.
  3. Cover the dough with a damp cloth and set it aside to rest for 30 minutes while you prepare the filling.

Step 2: Making the Mushroom Filling

  1. Heat oil in a wok or kadai over medium heat.
  2. Add the cumin seeds to the hot oil and let them crackle.
  3. Add the finely chopped onions and sauté until they turn soft and pinkish in color.
  4. Add the chopped green chilies and mushrooms, then stir-fry for about 5-7 minutes. Season with salt and cook until the mushrooms release their moisture and shrink in size.
  5. Once the mushrooms are cooked, sprinkle the garam masala powder and turmeric powder. Stir the mixture well and cook for another minute.
  6. Turn off the heat and let the mushroom mixture cool completely.

Step 3: Assembling the Mushroom Paratha

  1. Divide the dough into 5 equal portions and roll each into a smooth ball.
  2. Take one ball and flatten it gently using your fingers, then roll it out into a small disc, about 3 inches in diameter.
  3. Place a spoonful of the mushroom filling in the center of the dough disc.
  4. Carefully fold the edges of the dough over the filling to encase it. Pinch the edges to seal the filling inside.
  5. Dust the stuffed dough ball with a little flour and gently roll it out into a larger circle, being careful not to let the filling escape.

Step 4: Cooking the Paratha

  1. Preheat a skillet or tava over medium heat.
  2. Place the rolled paratha onto the hot skillet. Let it cook for 30-45 seconds, or until you see small bubbles forming on the surface.
  3. Flip the paratha and brush the cooked side with a teaspoon of ghee or oil. Flip again so that the oiled side is cooked.
  4. Press the paratha gently with a spatula to ensure even cooking. Flip a couple of times, allowing both sides to become golden brown and crisp.
  5. Remove the cooked paratha from the skillet and place it on a plate. Repeat the process with the remaining dough portions and filling.

Step 5: Serving
