Sunflower Oil 2 teaspoons
Salt To taste
Turmeric Powder (Haldi) 1/4 teaspoon
Whole Wheat Flour 1 cup

Instructions

Preparing the Filling

  1. Grate the Ingredients: Begin by grating both the paneer and the radish. Set these aside for later use.

  2. Cook the Filling: In a skillet, heat 1 teaspoon of sunflower oil over medium flame. Add cumin seeds, finely chopped ginger, and garlic to the skillet, sautéing for about 30 seconds until fragrant.

  3. Add Radish: Next, incorporate the grated radish along with salt. Increase the heat and continue to sauté the mixture until all the moisture from the radish evaporates. Once done, turn off the flame.

  4. Combine Ingredients: Transfer the radish mixture into a mixing bowl. To this bowl, add the grated paneer, chopped green chili, and cumin powder. Mix everything together until well combined. Your Mooli Paneer filling is now ready!

Making the Paratha

  1. Prepare the Dough: In a separate mixing bowl, add the whole wheat flour. Gradually pour in a little water at a time while kneading, until you form a smooth and pliable dough. Once done, divide the dough into equal portions.

  2. Roll the Dough: On a flat, floured surface, take one portion of dough and shape it into a ball. Flatten it slightly with your fingers, then roll it out into a circle approximately 3 inches in diameter.

  3. Fill the Paratha: Place about 2 tablespoons of the prepared Mooli Paneer filling in the center of the rolled-out dough. Gather the edges together and seal it to enclose the filling completely.

  4. Shape the Paratha: Gently roll the stuffed dough ball into a circle about 6-7 inches in diameter, being careful not to let the filling spill out.

  5. Cook the Paratha: Heat a skillet over medium heat and add a little ghee. Place the rolled-out paratha onto the skillet and cook until golden brown spots appear on both sides, adding more ghee as necessary for a crispy texture.

  6. Repeat the Process: Continue the process with the remaining dough and filling until all parathas are cooked.
