Ingredients:

Quantity Ingredient
1 tsp Curry powder
1 tsp Ground cumin
1 tsp Ground ginger
1/2 tsp Black pepper
3 tsp Black mustard seeds
2 tsp Brown mustard seeds
2 tsp Cumin seeds
1/4 tsp Sesame seeds
1 clove Garlic, minced
1 cup Red lentils
2 Onions, chopped
1 stalk Celery, chopped
2 Carrots, chopped
5 cups Vegetable broth
3 cups Water
1 Diced tomato
To taste Salt

Instructions:

  1. Heat the Seeds: In a soup pot, heat the mustard seeds and cumin seeds in oil over medium heat, stirring constantly until the mustard seeds start to pop.

  2. Add Sesame Seeds: Lower the heat and add sesame seeds. Cook until golden.

  3. Aromatics: Stir in minced garlic, curry powder, ground cumin, ground ginger, and black pepper. Cook until fragrant.

  4. Add Lentils: Stir in the red lentils and cook for 5 minutes.

  5. Add Vegetables: Add chopped onions, celery, and carrots. Cook for an additional minute.

  6. Add Broth: Pour in vegetable broth and water. Bring to a boil.

  7. Simmer: Reduce heat, cover, and simmer for 30-35 minutes, or until lentils are soft and easily mashed with the back of a spoon.

  8. Add Tomatoes: Stir in diced tomatoes and salt. Cook for another 25 minutes, stirring occasionally.

  9. Check Seasoning: Taste and adjust seasoning if necessary.

  10. Serve: Ladle the soup into bowls and serve hot.
