Instructions

  1. Prepare the Spice Blend: Begin by blending the shallots, garlic, red chilies, bird’s eye chilies, galangal, ginger, turmeric, and coriander into a smooth paste.

  3. Mix the Botok Filling: In a bowl, combine the sautéed spices with grated young coconut, diced tofu, tempeh, and fresh shrimp, ensuring all ingredients are evenly coated.

  4. Wrap with Banana Leaves: Take enough banana leaves to create a pocket and place a portion of the mixture in the center. Fold the leaves securely to encase the filling.
