Masalewari Koki Recipe (Spiced Sindhi Roti)

Ingredients:

Onion, finely chopped 1
Ginger, finely chopped 1 inch piece
Green Chillies, finely chopped 2 (adjustable)
Coriander (Dhania) Leaves, finely chopped 3 tablespoons
Mint Leaves (Pudina), finely chopped 2 tablespoons
Turmeric powder (Haldi) 1/4 teaspoon
Asafoetida (Hing) A pinch
Cumin seeds (Jeera) 1/4 teaspoon
Ajwain (Carom seeds) 1/4 teaspoon
Red Chilli powder 1/2 teaspoon
Anardana Powder (Pomegranate Seed Powder), dry and slightly crushed 1/4 teaspoon
Ghee (clarified butter), as required, for kneading and roasting As needed
Salt To taste

Preparation Time: 25 minutes

Cooking Time: 15 minutes

Total Time: 40 minutes


Instructions:

  1. Prepare the Dough:

    • Begin by taking the whole wheat flour in a large mixing bowl.
    • Add the finely chopped onion, ginger, green chilies, coriander leaves, mint leaves, carom seeds, cumin seeds, dry and slightly crushed pomegranate seeds, asafoetida, salt, red chili powder, and turmeric powder to the flour.
    • Mix all the ingredients together thoroughly until the spices and herbs are evenly distributed throughout the flour.
  2. Knead the Dough:

    • Gradually add water, a little at a time, to the flour mixture while kneading to form a soft dough.
    • Once the dough begins to come together, add 2 tablespoons of ghee and knead it again to make the dough smooth and pliable.
    • Cover the dough and let it rest for about 10 to 15 minutes. This resting period helps to bring out the flavors of the herbs and spices.
  3. Roll the Roti:

    • After 10 to 15 minutes, knead the dough once again until it becomes smooth and soft.
    • Preheat your tawa or flat griddle over medium heat.
    • While the tawa heats up, divide the dough into small balls, about the size of an orange.
    • Dust each ball with dry flour and use a rolling pin to flatten the dough into a 3-4 inch thick roti.
  4. Cook the Koki:

    • Place the rolled-out roti onto the preheated tawa.
    • Cook the roti on medium heat, flipping it once the underside becomes golden brown and slightly crisp.
    • Brush ghee generously on both sides of the roti while it continues to cook, allowing it to become crisp and golden on both sides.
    • Continue cooking until the Koki turns crisp and is evenly cooked on both sides.
  5. Serve:

    • Once the Koki is cooked, remove it from the tawa and place it on a serving plate.
    • Serve the Masalewari Koki hot, ideally with Boondi Raita and Dhaniya Pudina Chutney for a traditional and satisfying breakfast experience.
