Instructions:

  1. Sieve flour and salt together in a mixing bowl.

  2. Gradually add water while kneading the mixture to make a soft dough.

  3. Once the dough is well-kneaded, cover it with a damp cloth and set it aside for 30 minutes to rest.

  4. In a separate bowl, mix 4 tablespoons of butter and flour to make a paste. Beat well until smooth.

  5. After the dough has rested, knead it once again.

  6. Melt 2 tablespoons of butter and gradually pour it into the dough, kneading until the dough becomes very soft.

  7. Divide the dough into 6 equal parts.

  8. Roll each part into a thin large circle.

  9. Fold each circle in half.

  10. Spread a thin layer of the prepared butter-flour paste on the folded circle.

  11. Fold it once again into half, lengthways, so it looks like a thin long strip.

  12. Shape each strip into a spiral, keeping the fold on the outer side.

  13. Press and flatten each spiral to form a ball.

  14. Using your palms, flatten each ball into a 1/4″ thick roti.

  15. Heat a griddle and add a little butter or ghee.

  16. Shallow fry each roti separately until golden brown on both sides.

  17. Serve hot and enjoy the delightful Shahi Roti with your favorite curry or chutney.

This Shahi Roti recipe is a testament to the rich culinary heritage of North India, where each bite is infused with tradition and flavor. 🍽️🥘🇮🇳
