Pepes Tahu Jamur Recipe
Ingredients:
- 1 block tofu (about 200 grams)
- 100 grams oyster mushrooms
- 1 egg
- For the Spice Mix:
- 4 shallots
- 3 cloves garlic
- 3 chilies (adjust to taste)
- Banana leaves for wrapping
- Toothpicks for securing

- Start by crumbling the tofu into a large mixing bowl.
- Clean the oyster mushrooms thoroughly, then slice them into small pieces.
- Add the sliced mushrooms to the bowl with the crumbled tofu.

- In a blender or food processor, combine the shallots, garlic, and chilies. Blend until you achieve a smooth paste.
- Mix this spice paste into the tofu and mushroom mixture, ensuring it’s well incorporated.

Add the Egg and Seasonings:
- Crack the egg into the mixture and stir to combine. This will help bind the ingredients together.
- Season with salt and your choice of seasoning (such as MSG or bouillon powder) to taste. Mix thoroughly to ensure even seasoning.

- Cut the banana leaves into squares large enough to wrap each portion of the mixture.
- Place a spoonful of the tofu and mushroom mixture onto the center of each banana leaf square.

- Preheat a non-stick pan or an old frying pan over low heat.
- Arrange the banana leaf parcels in the pan. Cook gently, turning occasionally, until the parcels are fully cooked and the filling is firm. This should take about 15-20 minutes.
