Tofu with Spices Recipe (Tahu Bumbu)

Ingredients

Ingredient Quantity
White tofu 4 pieces
Green mustard greens 1 bunch
Carrots 5
Beef meatballs 10 pieces
Green onions 1 stalk
Celery leaves As needed
Garlic 3 cloves
Ladaku brand ground pepper ¾ pack
Salt To taste
Sugar To taste
Cooking oil As needed

Instructions

  1. Prepare the tofu:

    • Cut the white tofu into small cubes for easy frying.
  2. Fry the tofu:

    • Heat cooking oil in a pan.
    • Fry the tofu cubes until they turn golden brown, then remove from the pan and drain on a paper towel to remove excess oil.
  3. Prepare the vegetables:

    • Slice the carrots diagonally for a visually appealing cut.
    • Cut the mustard greens into bite-sized pieces.
    • Slice the beef meatballs into your desired thickness for even cooking.
  4. Prepare the aromatics:

    • Peel the garlic cloves, crush them slightly to release their oils, and finely chop them.
  5. Sauté the garlic:

    • Heat a little oil in a pan, just enough to sauté.
    • Add the chopped garlic and sauté until fragrant, which will add depth of flavor to the dish.
  6. Cook the meatballs and carrots:

    • Add the sliced beef meatballs and carrots to the pan with the garlic, and stir fry them for a couple of minutes.
    • Pour in 3 to 4 glasses of water, then let the mixture come close to a boil.
  7. Add the mustard greens:

    • Once the water is almost boiling, add the mustard greens to the pot and stir them in gently.
  8. Season the dish:

    • Add salt, ground pepper (Ladaku brand or any ground pepper you prefer), and sugar to taste.
    • Sprinkle in the chopped green onions for added freshness.
  9. Let it simmer:

    • Allow the dish to simmer for a few minutes until the flavors meld together and the vegetables are tender.
  10. Finish with celery:

    • Just before turning off the heat, add the chopped celery leaves for a fragrant finish.
    • Stir gently and turn off the stove.
  11. Serve the dish:

    • This flavorful tofu and vegetable dish is best enjoyed hot.
    • Serve alongside crispy fried tempeh or tofu for a delicious, balanced meal.
