Tuna Masak Gulai Aceh
Ingredients
- 500 g tuna (I used half a large tuna fish, it was quite big!)
- Salt and lime juice (to taste)
- Water (as needed)
- Salt and sugar (to taste)
Spice Paste:
- 15 red curly chilies (can be substituted with red bird’s eye chilies)
- 30 g coriander seeds (I used a little less)
- 6 shallots
- 2 cloves garlic
- 3-4 dried candlenuts (asam sunti)
- 1 thumb-sized piece of ginger
- 1 thumb-sized piece of turmeric
Additional Ingredients:
- 1 stalk curry leaves (optional)
- 3 green chilies, sliced lengthwise (optional, as I didn’t have any)
- 3 dried candlenuts (asam sunti)
Instructions
- Prepare the Tuna: Clean the tuna thoroughly, then rub it with salt and lime juice. Set aside.
- Cook the Spice Paste: In a pan, sautรฉ the spice paste ingredients until they are cooked through, fragrant, and change color.
- Add Aromatics: Add the curry leaves and dried candlenuts (asam sunti). Pour in a little water and let it come to a boil.
- Add Tuna: Add the tuna and green chili slices. Stir well to combine.
- Simmer: Cook until the sauce reduces and starts to release oil.
- Season: Add salt and sugar to taste. Adjust the seasoning if needed.
- Serve: Remove from heat and serve hot.
