Aloo Gobi Sabzi – Spicy Potato Cauliflower Sabzi
This Aloo Gobi Sabzi recipe is a simple, quick, and flavorful North Indian dish, perfect for a lunch or dinner. Ingredients:
- 3 Potatoes (Aloo), peeled and cubed
- 1 Cauliflower (Gobi), washed and cut into florets
- 1-inch Ginger, grated
- 3 cloves Garlic, finely chopped
- 2 Onions, roughly chopped
- 3 Tomatoes, finely chopped
- 1/2 teaspoon Cumin seeds (Jeera)
- 1 teaspoon Turmeric powder (Haldi)
- 1 teaspoon Garam masala powder
- 1/2 teaspoon Red Chilli powder
- 4 sprigs Coriander (Dhania) Leaves, finely chopped
- Oil, as required
- Salt, to taste

Instructions:
- Heat oil in a heavy-bottomed pan and add cumin seeds, ginger, and garlic. Let them crackle for a few seconds.
- Add the onions and sauté until slightly tender.
- Add the cubed potatoes, a pinch of salt, and stir well. Halfway through cooking, add 1/2 teaspoon turmeric powder and cook the potatoes until tender.
- In a separate pan, heat oil and add the cauliflower and salt. Steam cook the cauliflower until partially tender.
- Add the chopped tomatoes and the remaining turmeric powder to the cauliflower. Cook until the tomatoes soften and the cauliflower is fully cooked.
- Combine the cooked potatoes with the cauliflower and stir in red chilli powder, garam masala, and a splash of water to coat the vegetables with the masala.
- Cover the pan and let everything steam cook together for another 4 to 5 minutes to allow the flavors to meld.
- Check the salt and spice levels and adjust if necessary. Turn off the heat.
- Stir in the chopped coriander leaves and serve.
