Aloo Gobi Sabzi – Spicy Potato Cauliflower Sabzi

This Aloo Gobi Sabzi recipe is a simple, quick, and flavorful North Indian dish, perfect for a lunch or dinner. The potatoes and cauliflower are combined with fragrant spices like garam masala and turmeric, giving this sabzi a rich texture and depth of flavor. Ingredients:

  • 3 Potatoes (Aloo), peeled and cubed
  • 1 Cauliflower (Gobi), washed and cut into florets
  • 1-inch Ginger, grated
  • 3 cloves Garlic, finely chopped
  • 2 Onions, roughly chopped
  • 3 Tomatoes, finely chopped
  • 1/2 teaspoon Cumin seeds (Jeera)
  • 1 teaspoon Turmeric powder (Haldi)
  • 1 teaspoon Garam masala powder
  • 1/2 teaspoon Red Chilli powder
  • 4 sprigs Coriander (Dhania) Leaves, finely chopped
  • Oil, as required
  • Salt, to taste

Preparation Time: 10 minutes
Cooking Time: 30 minutes

Instructions:

  1. Heat oil in a heavy-bottomed pan and add cumin seeds, ginger, and garlic. Let them crackle for a few seconds.
  2. Add the onions and sauté until slightly tender.
  3. Add the cubed potatoes, a pinch of salt, and stir well. Halfway through cooking, add 1/2 teaspoon turmeric powder and cook the potatoes until tender.
  4. In a separate pan, heat oil and add the cauliflower and salt. Steam cook the cauliflower until partially tender.
  5. Add the chopped tomatoes and the remaining turmeric powder to the cauliflower. Cook until the tomatoes soften and the cauliflower is fully cooked.
  6. Combine the cooked potatoes with the cauliflower and stir in red chilli powder, garam masala, and a splash of water to coat the vegetables with the masala.
  7. Cover the pan and let everything steam cook together for another 4 to 5 minutes to allow the flavors to meld.
  8. Check the salt and spice levels and adjust if necessary. Turn off the heat.
  9. Stir in the chopped coriander leaves and serve.

This Aloo Gobi Sabzi can be enjoyed with hot Kadhi and Phulka for a comforting and complete meal, or it can be packed for lunch. It’s a perfect option for a wholesome, weeknight dinner or a satisfying lunchbox recipe.
