Delicious Chicken Abon Recipe

Ingredients:

  • 2 chicken breasts
  • 1 cup instant coconut milk (such as Kara)
  • 1 bay leaf
  • 1 kaffir lime leaf
  • 1.5 cm galangal, peeled and sliced
  • 4 cloves garlic
  • 6 shallots
  • Salt, to taste
  • Granulated sugar, to taste
  • Palm sugar, to taste

Instructions:

  1. Prepare the Chicken:

    • Begin by thoroughly washing the chicken breasts. Steam them until fully cooked. You can add a bay leaf to the steaming water to infuse a pleasant aroma into the chicken.
  2. Make the Spice Paste:

    • While the chicken is steaming, prepare the spice paste. In a blender or food processor, combine garlic, shallots, galangal, salt, granulated sugar, and palm sugar. Blend until smooth.
  3. Cook the Spice Paste:

    • Heat a pan over medium heat and add a bit of oil. Sauté the blended spice paste until fragrant. Add a small amount of water to the pan, followed by the coconut milk. Stir well to combine.
  4. Add Aromatics:

    • Introduce the bay leaf and kaffir lime leaf to the pan. Continue to cook the mixture, stirring occasionally, until it reaches a gentle boil. Then, turn off the heat and set the mixture aside.
  5. Shred and Grind the Chicken:

    • Once the chicken is steamed and cooled slightly, remove it from the bones and shred it using a fork. For a finer texture, you can further crush or grind the shredded chicken.
  6. Combine and Cook:

    • Add the shredded chicken to the pan with the cooked spice paste. Stir thoroughly to ensure the chicken is well-coated with the spices. Cook over low heat, stirring frequently, until the mixture starts to dry out and reach your desired consistency.
  7. Serve:

    • Once the chicken abon is sufficiently dry and flavorful, remove it from the heat. Serve warm or at room temperature as a savory topping or accompaniment.
