Instructions

  1. Preparation of Chillies: Begin by washing the green chillies thoroughly. Slice them down the middle and carefully deseed them, taking care to wash your hands afterwards to avoid any irritation.

  2. Filling the Chillies: In a mixer jar, combine the roasted gram dal, red chilli powder, cumin powder, ajwain, chaat masala, tamarind, and asafoetida. Add about 2 tablespoons of water and blend until you achieve a smooth paste. Stuff this mixture into each of the hollowed-out chillies, ensuring they are well filled.

  3. Batter Preparation: For the batter, mix together the gram flour, rice flour, red chilli powder, enos fruit salt, and a pinch of asafoetida in a bowl. Gradually add water (about 1/2 cup) to create a thick, smooth batter.

  4. Frying the Chillies: Heat sunflower oil in a kadai over medium-low heat. To check if the oil is ready, drop a small amount of batter into it; if it rises quickly, the oil is hot enough. Dip each stuffed chilli into the batter, ensuring they are evenly coated, and gently place them in the hot oil. Fry for about 30 seconds before turning them to achieve a golden-brown color on all sides.

  5. Draining and Garnishing: Use a slotted spoon to remove the fried chillies from the oil and place them on a kitchen paper towel to absorb excess oil. Repeat with the remaining chillies.

  6. Final Touch: Combine the chopped onion and coriander leaves, and sprinkle this mixture over the hot bajjis as a garnish.
