- Chicken (boneless): 1/2 kg
- Cloves (long): 10
- Ginger: 2-inch piece, finely chopped
- Lemon juice: 1 tbsp (or rice vinegar)
- Soy sauce: 1 tbsp
- Red chili sauce: 1 tbsp
- Black pepper powder: 1 tsp
- Green onions: A few, chopped
- Onion: 1, chopped
- Udon noodles: 500 grams (or soba noodles)
- Salt: To taste
- Water: 5 cups

Cook Time: 20 minutes
Instructions:
- Begin by rinsing the chicken thoroughly and draining off excess water. In a saucepan, bring water to a boil. Add the cloves and chicken, then cook until the chicken is tender (about 10-12 minutes).
- Once cooked, remove the chicken and set aside. Discard the cloves.
- Let the chicken cool and shred it using your hands or a fork.
- In a separate saucepan, combine the chicken broth, ginger, chopped onion, and shredded chicken. Bring it to a boil.
- Add black pepper powder, lemon juice (or rice vinegar), red chili sauce, and soy sauce. Stir well and allow it to simmer for 10 minutes.
- After 10 minutes, add the green onions and noodles. Mix everything together and cook until the noodles are tender.
- Serve hot, and for an extra treat, pair it with chicken manchurian and hakka noodles for a full meal.
