Description:
Assamese Bilahir Tok, where “Bilahi” means tomato and “Tok” means sour, is a simple yet flavorful chutney made in every Assamese household. This dish is quick to prepare and has a delicious spicy and tangy taste, thanks to the use of instant spices. It’s perfect for adding a zing to your meals.

Ingredients:

  • 6 tomatoes, finely chopped
  • 1/4 tsp turmeric powder
  • 1 tsp red chili powder
  • 1/2 tsp sugar
  • Salt, to taste

For Tempering:

  • 1 tbsp mustard oil
  • 1 tsp panch phoron masala
  • 2 bay leaves
  • 1 dried red chili, halved

Instructions:

  1. Heat mustard oil in a pan over medium heat.
  2. Once the oil is hot, add the panch phoron masala, bay leaves, and dried red chilies. Cook for about 15 seconds to release the flavors.
  3. Add the chopped tomatoes to the pan and cook for 2 minutes.
  4. Stir in turmeric powder, red chili powder, salt, and sugar. Reduce the flame and cook the mixture for 5 to 7 minutes, allowing the flavors to blend and the chutney to thicken.
  5. Turn off the heat and serve hot.
