Assamese Bilahir Tok, where “Bilahi” means tomato and “Tok” means sour, is a simple yet flavorful chutney made in every Assamese household. This dish is quick to prepare and has a delicious spicy and tangy taste, thanks to the use of instant spices. It’s perfect for adding a zing to your meals.
Ingredients:
- 6 tomatoes, finely chopped
- 1/4 tsp turmeric powder
- 1 tsp red chili powder
- 1/2 tsp sugar
- Salt, to taste
For Tempering:
- 1 tbsp mustard oil
- 1 tsp panch phoron masala
- 2 bay leaves
- 1 dried red chili, halved
Instructions:
- Heat mustard oil in a pan over medium heat.
- Once the oil is hot, add the panch phoron masala, bay leaves, and dried red chilies. Cook for about 15 seconds to release the flavors.
- Add the chopped tomatoes to the pan and cook for 2 minutes.
- Stir in turmeric powder, red chili powder, salt, and sugar. Reduce the flame and cook the mixture for 5 to 7 minutes, allowing the flavors to blend and the chutney to thicken.
- Turn off the heat and serve hot.
