Spicy Ayam Geprek

Ingredients:

  • 1/2 kg chicken (cut into small pieces, as desired)
  • 1 cup Sajiku flour (spicy variety recommended)
  • 1 large egg
  • For the sambal:
    • 5 shallots
    • 3 garlic cloves
    • 2 large red chilies
    • 7 bird’s eye chilies (adjust to taste)
    • Sugar, to taste
    • Salt, to taste
  • Cooking oil, for frying

Instructions:

  1. Prepare the Chicken:

    • Cut the chicken into bite-sized pieces, adjusting to your preference.
    • In a bowl, beat the egg and dip each piece of chicken into the egg mixture, ensuring an even coating.
    • Dredge the egg-coated chicken pieces in Sajiku flour, making sure they are well-coated.
  2. Fry the Chicken:

    • Heat cooking oil in a deep pan over medium heat.
    • Fry the chicken pieces until they are golden brown and fully cooked. Drain on paper towels to remove excess oil.
  3. Make the Sambal:

    • In the same pan, lightly fry the shallots, garlic cloves, red chilies, and bird’s eye chilies until they are just half-cooked. This will help release their flavors.
    • Using a mortar and pestle or a blender, coarsely grind the fried ingredients. The sambal should be somewhat chunky, not smooth.
  4. Combine and Serve:

    • Mix the fried chicken with the freshly made sambal, tossing gently to coat the chicken evenly.
    • Serve hot with steamed rice and additional fresh vegetables, if desired.
