Cardamom (elaichi) 2 pods
Cinnamon stick (dalchini) 1-inch piece

Instructions

  1. Pressure Cook the Potatoes: Start by placing the baby potatoes in a pressure cooker. Add water and salt to it, and cook for about 2 whistles. Once done, let the pressure release naturally.

  2. Peel the Potatoes: After the pressure has released, peel the potatoes and set them aside.

  3. Prepare the Tomato Puree: In a blender, add the tomatoes and blend them into a smooth puree.

  4. Heat the Oil and Spices: Heat oil in a deep pan or kadai over medium heat. Once hot, add the cloves, cardamom, and cinnamon stick. Let the spices sizzle for about 10 seconds to release their aroma.

  5. Cook the Potatoes: Add the peeled baby potatoes to the pan and stir them well to coat them with the spices. Let them cook for about 1 minute.

  6. Add the Tomato Puree and Spices: Pour in the prepared tomato puree along with cumin powder, red chili powder, coriander powder, and turmeric powder. Mix everything well.

  7. Simmer the Gravy: Add 1 cup of water to the pan, stir, and bring it to a boil. Let it simmer until the potatoes are tender and cooked through, absorbing the flavors of the spices and tomato gravy.

  8. Adjust Seasoning: Taste the dish and add salt according to your preference. Let it cook for an additional minute, allowing the flavors to meld together.

  9. Serve: Once the potatoes are tender and the gravy has thickened slightly, remove from heat. Serve hot with Bengali dal and luchi for a traditional lunch experience.
