Spicy Baby Potatoes Recipe

On those days when your refrigerator is devoid of vegetables, this simple yet flavorful dish comes to the rescue. Spicy baby potatoes are quick and easy to prepare, and the taste is elevated by using everyday spices. This recipe combines the goodness of potatoes with a medley of vibrant spices, making it perfect for a lunch or a quick meal.

Ingredients:

Baby potatoes 12 small potatoes
Oil As needed
Dried red chili 1 piece
Cumin seeds 1 tsp
Curry leaves 1 sprig
Coriander powder 1 tsp
Turmeric powder ½ tsp
Cumin powder 1 tsp
Red chili powder 1 tsp
Garam masala powder 1 tsp
Amchur (dried mango powder) 1 tsp
Salt To taste
Lemon juice 1 tsp
Fresh coriander leaves 3 tbsp (chopped)

Instructions:

  1. To begin, wash and boil the baby potatoes in a pressure cooker with enough water. Once the potatoes are tender, allow them to cool before peeling off the skin and setting them aside.

  2. Heat some oil in a pan. Add the dried red chili, curry leaves, and cumin seeds. Sauté these for about 10 seconds until they release their aroma.

  3. Next, add the coriander powder, turmeric powder, cumin powder, red chili powder, garam masala powder, and amchur powder. Stir well and let the spices cook for around 30 seconds to bring out their full flavors.

  4. Now, add the boiled and peeled potatoes to the pan. Toss everything together, making sure the potatoes are well coated with the spices. Let them cook for about 6 to 7 minutes on medium heat, stirring occasionally.

  5. Add salt to taste and squeeze in the fresh lemon juice. Stir again to mix well.

  6. Once cooked, turn off the heat and garnish with freshly chopped coriander leaves.

Serving Suggestions:
Serve these spicy baby potatoes alongside panchmel dal (a mixed lentil dish), boondi raita (a yogurt-based side dish), and phulkas (soft Indian flatbreads) for a delightful and fulfilling meal.
