Instructions:

To begin, wash and boil the baby potatoes in a pressure cooker with enough water. Once the potatoes are tender, allow them to cool before peeling off the skin and setting them aside.

Heat some oil in a pan. Add the dried red chili, curry leaves, and cumin seeds. Sauté these for about 10 seconds until they release their aroma.

Next, add the coriander powder, turmeric powder, cumin powder, red chili powder, garam masala powder, and amchur powder. Stir well and let the spices cook for around 30 seconds to bring out their full flavors.

Now, add the boiled and peeled potatoes to the pan. Toss everything together, making sure the potatoes are well coated with the spices. Let them cook for about 6 to 7 minutes on medium heat, stirring occasionally.
