Balado Beef Ribs with Potatoes and Stinky Beans

Ingredients

  • 5 small pieces of beef ribs (cut into small cubes)
  • 4 potatoes (diced)
  • 3 stinky beans (pete)
  • 5 cloves of garlic
  • 5 shallots
  • 5 small red chilies
  • 5 bay leaves
  • 2 stalks of lemongrass
  • 2 cm galangal
  • Salt to taste
  • MSG (optional, to taste)
  • Sugar to taste

Instructions

  1. Prepare the Ingredients:

    • Cut the beef ribs into small cube-sized pieces, separating the meat from the bones.
    • Dice the potatoes into small cubes.
    • Separate the stinky beans (pete) from their pods.
  2. Blend the Spices:

    • In a blender or using a mortar and pestle, blend the garlic, shallots, and red chilies into a smooth paste.
  3. Sauté the Spice Paste:

    • Heat a little oil in a pan and sauté the blended spice paste until it becomes fragrant.
    • Add the bay leaves, lemongrass, and galangal to the pan, continuing to sauté until the mixture is aromatic.
  4. Cook the Main Ingredients:

    • Add the diced potatoes, beef rib cubes, and stinky beans to the pan.
    • Stir the mixture well to ensure the spice paste coats all the ingredients.
  5. Season and Simmer:

    • Season the dish with salt, sugar, and MSG (if using) to taste.
    • Let the mixture cook thoroughly until the potatoes and beef ribs are tender and fully cooked.
  6. Serve:
