Ayam feat Tempe Balado

Ingredients:

  • 1/2 chicken, cut into pieces
  • 1 block tempe, sliced
  • For the Balado Spice Mix:
    • 6 shallots
    • 15 red curly chilies
    • 10 bird’s eye chilies
    • 1/2 tomato
    • Salt to taste
  • For the Stewing Spice Mix:
    • 1 large garlic clove
    • Salt to taste
    • Oil for frying

Steps:

  1. Prepare the Chicken:

    • Clean the chicken pieces thoroughly.
    • Stew the chicken briefly until it’s cooked through, seasoning with salt to taste.
  2. Prepare the Tempe:

    • Heat oil in a pan and fry the tempe slices until they are golden brown and crispy. Set aside.
  3. Fry the Chicken:

    • In the same pan, fry the stewed chicken pieces until they turn a rich golden brown. Be careful not to over-fry; aim for a crisp exterior without making the chicken too hard. Remove and set aside.
  4. Make the Balado Spice Mix:

    • In a blender or food processor, blend together the shallots, red curly chilies, bird’s eye chilies, and tomato until smooth.
    • Heat a generous amount of oil in a pan (you can use some of the oil from frying the chicken). Sauté the spice mixture until the chilies are well-cooked and the oil begins to separate from the mixture.
    • Season with salt and adjust to taste.
  5. Combine and Serve:

    • Once the spice mix is ready and fragrant, turn off the heat.
    • Add the fried tempe and chicken pieces to the pan with the balado sauce. Stir well to ensure everything is evenly coated with the sauce.
