Ayam feat Tempe Balado
Ingredients:
- 1/2 chicken, cut into pieces
- 1 block tempe, sliced
- For the Balado Spice Mix:
- 6 shallots
- 15 red curly chilies
- 10 bird’s eye chilies
- 1/2 tomato
- Salt to taste
- For the Stewing Spice Mix:
- 1 large garlic clove
- Salt to taste
- Oil for frying

Prepare the Chicken:
- Clean the chicken pieces thoroughly.
- Stew the chicken briefly until it’s cooked through, seasoning with salt to taste.

Prepare the Tempe:
- Heat oil in a pan and fry the tempe slices until they are golden brown and crispy. Set aside.

Fry the Chicken:
- In the same pan, fry the stewed chicken pieces until they turn a rich golden brown. Be careful not to over-fry; aim for a crisp exterior without making the chicken too hard. Remove and set aside.

Make the Balado Spice Mix:
- In a blender or food processor, blend together the shallots, red curly chilies, bird’s eye chilies, and tomato until smooth.
- Heat a generous amount of oil in a pan (you can use some of the oil from frying the chicken). Sauté the spice mixture until the chilies are well-cooked and the oil begins to separate from the mixture.
- Season with salt and adjust to taste.

- Once the spice mix is ready and fragrant, turn off the heat.
- Add the fried tempe and chicken pieces to the pan with the balado sauce. Stir well to ensure everything is evenly coated with the sauce.
