Spicy Chicken and Tofu (Balado Ayam Tahu)
Ingredients:
- 1 kg chicken (cut into 8 pieces)
- 5 pieces of white tofu (cut each into 4 pieces)
- For Bumbu A:
- 5 cloves garlic
- 2 cm ginger
- Juice of 1 lime
- Salt to taste
- For Bumbu B:
- 100 grams curly red chili peppers
- 9 cloves shallots
- 3 tomatoes
- Salt to taste
- Juice of 1 lime
Instructions:

Prepare the Chicken and Tofu:
- Rinse the chicken pieces thoroughly and cut them into 8 pieces.
- Cut each tofu piece into 4 smaller pieces.
- Squeeze the juice of 1 lime over the chicken and tofu to remove any unpleasant odors.

Marinate the Chicken and Tofu:
- Blend the ingredients for Bumbu A (garlic, ginger, and lime juice) into a smooth paste, adding a little water if necessary.
- Mix the paste with the chicken and tofu. Allow it to marinate for 5 minutes.
- Heat oil in a frying pan and fry the tofu pieces until golden brown. Remove and set aside.
- In the same pan, fry the chicken pieces until fully cooked. Remove and set aside with the tofu.

Prepare the Spice Paste:
- Blend the ingredients for Bumbu B (chili peppers, shallots, and tomatoes) into a smooth paste.
- Heat a little oil in the same pan used for frying the chicken and tofu. Add the spice paste and cook until fragrant, stirring occasionally.
- Add salt to taste and the juice of 1 lime to the paste, and continue cooking until the raw chili smell has dissipated.

Combine and Serve:
- Once the spice paste has cooled slightly, mix it with the fried chicken and tofu.
- The lime juice in Bumbu A helps remove any fishy smell from the chicken, while the lime juice in Bumbu B helps reduce the strong smell of the chilies.
