Balado Telur Ceplok with Pindang Salem: A Spicy Indonesian Delight

Ingredients:

  • 2 pieces of pindang salem (salted fish)
  • 4 large eggs
  • 6 shallots
  • 3 cloves of garlic
  • 3 candlenuts
  • 11 curly red chilies (approximately 10-15 cm long)
  • 1 tomato
  • 1/3 teaspoon salt (adjust to taste)
  • 1.4 teaspoons sugar (adjust to taste)
  • A pinch of Royco seasoning (optional)
  • 100-130 ml water
  • Cooking oil, as needed for sautéing

Instructions:

  1. Prepare the Pindang Salem: Start by thoroughly washing the pindang salem to remove any excess salt or impurities. Once cleaned, heat oil in a pan and fry the pindang salem until golden and crispy. Set aside.

  2. Fry the Eggs: In the same pan, fry the eggs sunny-side up (ceplok) until the edges are crispy and the yolks are cooked to your liking. Remove and set aside.

  3. Make the Spice Paste: Using a mortar and pestle or a food processor, blend the shallots, garlic, candlenuts, and curly red chilies into a smooth paste.

  4. Cook the Spice Paste: Heat some cooking oil in a pan over medium heat. Add the spice paste and sauté until it becomes aromatic and slightly golden.

  5. Add Tomato and Seasonings: Slice the tomato and add it to the pan with the spice paste. Continue to cook until the tomato softens and blends into the paste. Add the salt, sugar, and Royco seasoning (if using). Mix well.

  6. Add Water and Simmer: Pour in the water and bring the mixture to a boil. Allow it to simmer for a few minutes to let the flavors meld together.

  7. Combine Ingredients: Gently add the fried eggs and pindang salem into the pan. Stir to coat them with the spicy sauce. Continue to simmer until the sauce thickens slightly and the flavors have fully infused into the eggs and fish.

  8. Serve: Once the dish is well-combined and the sauce has reached your desired consistency, transfer it to a serving dish. Enjoy the Balado Telur Ceplok with Pindang Salem warm with steamed rice or as part of a larger Indonesian meal.

Enjoy Your Meal: Balado Telur Ceplok with Pindang Salem is ready to be served. This dish offers a delightful combination of spicy, savory flavors that are sure to satisfy your taste buds. Happy cooking!
