Simple Telor Balado Recipe
Ingredients:
- 4 large eggs
- 1/4 bunch of green beans
- Beef or chicken liver (boiled)
- A handful of fresh basil leaves
- 1 ripe tomato
- Spice Paste:
- 20 bird’s eye chilies (adjust to taste)
- 3 curly red chilies
- 4 shallots
- 2 garlic cloves
- Water (as needed)
- Salt
- Sugar
- Seasoning (optional)
Instructions:

Prepare the Eggs:
- Fry the eggs to your desired doneness. Set aside.

Make the Spice Paste:
- Blend or grind the shallots, garlic, bird’s eye chilies, and curly red chilies into a smooth paste.

Cook the Spice Paste:
- Heat oil in a pan and sauté the spice paste until the oil starts to separate and the paste slightly reduces.

- Add water to the pan to create a sauce. Season with salt, sugar, and optional seasoning to taste.

- Add the chopped green beans and tomato to the pan. Cook until the beans are half tender.

- Gently fold in the fried eggs and boiled liver. Stir well to ensure the eggs and liver are evenly coated with the sauce.

- Once the water has mostly evaporated and the sauce has thickened, add the fresh basil leaves. Allow it to wilt for a few minutes.
