Telor Ceplok Balado: A Spicy Indonesian Fried Egg Delight

12 Red Chilies (Cabe Merah)
3 Bird’s Eye Chilies (Rawit Merah)
6 Shallots (Bawang Merah)
2 Garlic Cloves (Bawang Putih)
2 Lemongrass Stalks (Serai)
2 Red Tomatoes
To taste Salt
To taste Masako (seasoning)
To taste Sugar
As needed Cooking Oil
1 sachet Shrimp Paste (Terasi) – optional

Instructions

  1. Begin by grinding the red chilies, bird’s eye chilies, garlic, shallots, shrimp paste (if using), and tomatoes together. You can use a mortar and pestle or a blender for this step, achieving a smooth paste.

  2. In a frying pan, heat a generous amount of cooking oil over medium heat. Once hot, add the bruised lemongrass stalks, allowing them to infuse the oil with their aromatic flavor.

  3. Next, add the blended spice mixture to the pan, sautéing until fragrant and the oil begins to separate from the spices.

  4. Season the mixture with salt, sugar, and Masako to taste, adjusting until you reach the perfect balance of flavors.

  5. Carefully add the fried eggs to the pan, allowing them to absorb the spicy sauce for a few moments. Cook just until heated through.
