Balado Kentang Ati Ampela Telor Ceplok: A Flavorful Indonesian Dish


Ingredients:

  • Potatoes: Enough to suit your needs (pre-fried)
  • Chicken Liver and Gizzard (Ati Ampela): Pre-fried
  • Fried Eggs (Telor Ceplok): As desired
  • Sweet Soy Sauce (Kecap Manis)
  • Seasoning (Penyedap Rasa)
  • Water
  • Bay Leaves (Daun Salam)
  • For the Spice Paste:
    • 4 cloves garlic
    • 8 shallots
    • 5-6 curly red chilies (cabe merah keriting)
    • Sugar
    • Salt

Steps:

  1. Prepare the Spice Paste: Start by blending the garlic, shallots, and curly red chilies into a smooth paste. Adjust the quantities according to your heat preference and desired spice level.

  2. Sauté the Spice Paste: Heat a pan over medium heat and add a little oil. Sauté the spice paste along with bay leaves until fragrant and the paste begins to darken slightly.

  3. Add Ingredients: Once the spice paste is aromatic, add the pre-fried potatoes, chicken liver and gizzard, and fried eggs to the pan. Stir to coat all the ingredients with the spice mixture.

  4. Season and Simmer: Pour in a small amount of water and stir in the sweet soy sauce and seasoning. Continue to cook, allowing the mixture to simmer gently.

  5. Adjust the Flavors: Taste the dish and adjust the seasoning with more salt, sugar, or soy sauce as needed. Ensure the flavors are well balanced.

  6. Serve: Once the flavors have melded and the dish has a rich, slightly saucy consistency, remove from heat. Serve hot with steamed rice for a complete meal.
