Balado Smoked Skate Fish

Ingredients

Smoked skate fish 500 grams
Cooking oil 3 tablespoons
Water As needed
White or palm sugar To taste
Red chilies 10 pieces
Bird’s eye chilies 5 pieces
Garlic 4 cloves
Shallots 5 cloves, thinly sliced
Ginger 1 cm
Kaffir lime leaves 2 leaves
Salt To taste
Flavor enhancer To taste

Instructions

  1. Preparation: Rinse the smoked skate fish and let it drain while you prepare the other ingredients.
  2. Blend Ingredients: In a blender or mortar, combine the red chilies, bird’s eye chilies, garlic, and ginger. Blend until smooth.
  3. Sauté Shallots: Heat the cooking oil in a pan over medium heat. Sauté the sliced shallots until they turn golden brown. Remove a portion for garnish later.
  4. Cook Spice Mixture: Add the blended spice paste and kaffir lime leaves to the pan. Sauté until fragrant.
  5. Combine: Gently add the smoked skate fish, along with salt, flavor enhancer, sugar, and just enough water to moisten. Stir well to combine.
  6. Simmer: Cover the pan and reduce the heat to low. Cook for about 10 minutes, allowing the flavors to meld while keeping some moisture (avoid drying it out).
  7. Taste and Serve: Check for seasoning and adjust as necessary. Once perfect, serve hot, garnished with the reserved fried shallots.
