Instructions
- Preparation: Rinse the smoked skate fish and let it drain while you prepare the other ingredients.
- Blend Ingredients: In a blender or mortar, combine the red chilies, bird’s eye chilies, garlic, and ginger. Blend until smooth.
- Sauté Shallots: Heat the cooking oil in a pan over medium heat. Sauté the sliced shallots until they turn golden brown. Remove a portion for garnish later.
- Cook Spice Mixture: Add the blended spice paste and kaffir lime leaves to the pan. Sauté until fragrant.
- Combine: Gently add the smoked skate fish, along with salt, flavor enhancer, sugar, and just enough water to moisten. Stir well to combine.
- Simmer: Cover the pan and reduce the heat to low. Cook for about 10 minutes, allowing the flavors to meld while keeping some moisture (avoid drying it out).
- Taste and Serve: Check for seasoning and adjust as necessary. Once perfect, serve hot, garnished with the reserved fried shallots.
