Pindang Serani with Bandeng (Milkfish)

Instructions:
- Prepare the Fish: Clean the bandeng thoroughly, cut it into pieces, and set aside.
- Grind the Spices: Blend the ground spices until smooth.
- Slice the Spices: Chop the garlic, shallots, and chilies, then set aside.
- Sauté the Sliced Spices: In a pot, heat the cooking oil and sauté the sliced garlic, shallots, and chilies until fragrant. Add the ground spices and continue sautéing until aromatic.
- Add Water: Pour in enough water (about two small cups) and bring it to a boil.
- Cook the Fish: Once the water is boiling, add the fish pieces. Allow it to cook until the fish is done and the broth is fragrant.
- Season: Stir in the sugar and then add the chopped green onions. Taste and adjust seasoning as necessary.
- Final Boil: Let it boil again briefly before serving.
