Pindang Serani with Bandeng (Milkfish)

Ingredients:

Ingredient Quantity
Bandeng (Milkfish) 1 fish
Green onions 1 bunch
Water As needed
Cooking oil 2 tablespoons
Ground Spices:
Black pepper ½ teaspoon
Candlenuts 2 nuts
Turmeric 1 cm piece
Salt To taste
Sliced Spices:
Garlic 2 cloves
Shallots 4 cloves
Chilies To taste
Other Spices:
Ginger (smashed) ½ cm piece
Lemongrass (smashed) 1 stalk
Sugar To taste

Instructions:

  1. Prepare the Fish: Clean the bandeng thoroughly, cut it into pieces, and set aside.
  2. Grind the Spices: Blend the ground spices until smooth.
  3. Slice the Spices: Chop the garlic, shallots, and chilies, then set aside.
  4. Sauté the Sliced Spices: In a pot, heat the cooking oil and sauté the sliced garlic, shallots, and chilies until fragrant. Add the ground spices and continue sautéing until aromatic.
  5. Add Water: Pour in enough water (about two small cups) and bring it to a boil.
  6. Cook the Fish: Once the water is boiling, add the fish pieces. Allow it to cook until the fish is done and the broth is fragrant.
  7. Season: Stir in the sugar and then add the chopped green onions. Taste and adjust seasoning as necessary.
  8. Final Boil: Let it boil again briefly before serving.
