Lele Sambel Kemangi Terasi
Ingredients
- 3 large catfish (lele)
- Tofu (amount as desired)
- Fresh basil leaves (kemangi), enough to use the leaves only
- 15 bird’s eye chilies (lombok rawit)
- 1 tomato
- ½ teaspoon salt
- 1 teaspoon sugar
- A pinch of shrimp paste (terasi)
- Assorted fresh vegetables for serving (lalapan)
Instructions
-
Prepare the Fish and Tofu: Begin by frying the catfish and tofu until they are golden brown and crispy, seasoning with a yellow spice blend to eliminate any fishy taste. Once cooked, set them aside on a plate.
-
Make the Sambal: In a mortar and pestle, combine all the sambal ingredients except for the basil. Grind the ingredients together until they form a coarse paste; avoid grinding it too finely. Once combined, add the fresh basil leaves and give it a light crush, just to release their fragrant oils.
-
Serve: Present the crispy catfish and tofu alongside the sambal, accompanied by warm steamed rice. Add a selection of fresh vegetables on the side for a complete meal. Enjoy this delightful dish that beautifully balances flavors and textures!
