Spicy Basil Chicken Stir-Fry

Spicy Basil Chicken (Ayam Pedas Kemangi)

Ingredients:

  • 1/2 chicken, cut into pieces
  • 5 sprigs of basil
  • 7 shallots
  • 3 cloves of garlic
  • 1 large tomato
  • 1 packet of shrimp paste (terasi)
  • 2 large red chilies
  • 100 small red chilies (or to taste)
  • Royco seasoning (or any other seasoning of choice)
  • Brown sugar, white sugar, and salt to taste
  • Cooking oil

Instructions:

  1. Prepare the Chicken: Cut the chicken into pieces according to your preference. Squeeze lime juice over the chicken to tenderize and add flavor.

  2. Blend the Aromatics: Slice the shallots, garlic, tomato, large red chilies, and small red chilies. Place them in a blender along with the shrimp paste. Blend until finely chopped; the mixture should not be too smooth, just enough to break down the ingredients.

  3. Cook the Base: Heat a pan over medium heat without adding oil. Add the blended spice mixture and cook for about 2 minutes, stirring occasionally. This step helps to develop the flavors and reduce the raw taste of the spices.

  4. Add the Chicken: Once the spice mixture is fragrant and slightly thickened, add the chicken pieces to the pan. Pour in 1/2 cup of water to help the chicken cook through. Let it simmer until the chicken is nearly cooked and the water has reduced.

  5. Season and Finish Cooking: Add Royco seasoning (or your preferred seasoning), brown sugar, white sugar, and salt to taste. Stir well and adjust the seasoning according to your preference. Continue cooking until the chicken is fully cooked and the sauce has thickened.

  6. Add Oil and Basil: Once the chicken is cooked through, add a small amount of cooking oil to enrich the sauce. Finally, toss in the basil leaves and stir gently. Allow the basil to wilt slightly before turning off the heat.

  7. Serve: Your Spicy Basil Chicken is now ready to be served. Enjoy this flavorful dish with steamed rice or your favorite side.
