Sautéed Green Beans with Beef and Shrimp Paste (Buncis Sapi Balacan)
Ingredients:
- 500 grams baby green beans (buncis)
- 500 grams beef sirloin (sliced thinly)
- 1.5 tablespoons sweet soy sauce (kecap manis)
- 1 teaspoon beef broth powder (kaldu sapi bubuk)
- 1 teaspoon cornstarch (maizena)
- 8 shallots (bawang merah)
- 4 cloves garlic (bawang putih)
- Bird’s eye chilies (cabai rawit), to taste (the more you use, the spicier it will be)
- 1/2 teaspoon shrimp paste (terasi udang)
- Sugar (secukupnya)
- Salt (secukupnya)
- Seasoning (penyedap rasa), to taste
- Oil (for sautéing)
Instructions:

Marinate the Beef:
- Slice the beef into thin strips or your desired shape.
- In a bowl, combine the beef with sweet soy sauce, beef broth powder, and cornstarch. Mix well and let it marinate for about 20 minutes.

Prepare the Green Beans:
- Clean the baby green beans, trim the ends, and cut into smaller pieces if desired. Rinse thoroughly and drain.

Prepare the Spice Paste:
- Coarsely grind the shallots, garlic, and bird’s eye chilies together to make a paste.

Sauté the Beef:
- Heat a generous amount of oil in a wok or large frying pan over high heat. Add the marinated beef and cook for about 2 minutes, or until it starts to brown. Remove from the pan and set aside.

Cook the Spice Paste:
- In the same pan, add a bit more oil if needed and sauté the spice paste until fragrant.

Combine and Finish:
- Add the shrimp paste to the pan and stir well. Adjust the seasoning with sugar, salt, and seasoning powder as desired.
- Return the cooked beef to the pan along with the green beans. Stir well to combine everything evenly. Cook until the green beans are just wilted but still crisp, and the beef is cooked through.

- Adjust seasoning to taste. Serve hot as a delicious side dish or main course.

- Be mindful not to overcook the green beans; they should be tender yet crisp.
- The beef can become tough if overcooked, so keep the cooking time short to maintain tenderness.
