Ingredients
- Good quality melinjo skin
- Beef or beef trimmings
- 5 red curly chilies
- 10 red bird’s eye chilies
- 4 shallots
- 5 cloves of garlic
- Kaffir lime leaves
- Bay leaves
- Chicken bouillon powder
- Sugar to taste
Preparation Steps
- Prepare the Melinjo Skin: Slice the melinjo skin into thin, long strips and wash them thoroughly.
- Blanch the Melinjo Skin: Boil the melinjo skin in hot water for 1 minute, then drain and set aside.
- Cook the Beef: Boil the beef until tender, then cut it into small pieces.
- Prepare the Aromatics: Slice the red curly chilies, bird’s eye chilies, shallots, and garlic.
- Sauté the Aromatics: In a pan, sauté the sliced chilies, shallots, and garlic until fragrant. Add the kaffir lime leaves and bay leaves.

- Cook to Perfection: Stir-fry until the mixture is slightly dry, approximately 10 minutes. Don’t forget to add chicken bouillon powder and sugar to enhance the flavor.
