Tumis Tetelan Sapi with Papaya Flowers
Ingredients:
- 100 grams of papaya flowers (quantity to taste)
- 500 grams of beef short ribs or cheek meat
- 3 shallots
- 5 garlic cloves
- 2 large red chilies (optional)
- 5 bird’s eye chilies
- 3 large tomatoes
- 1/2 packet of ABC shrimp paste
- 1/2 tablespoon granulated sugar
- Salt to taste
- Royco seasoning to taste
Instructions:

Begin by thoroughly washing the beef short ribs or cheek meat. Place the meat in a pot and cook until the blood is no longer visible, which should take about 10 minutes of boiling.

Once the meat has cooled slightly, cut it into 2×2 cm cubes and set aside.

Clean the papaya flowers by removing them from their stems. Wash them thoroughly, cook until they are partially done, then drain and set aside.

In a blender or food processor, blend the bird’s eye chilies, shrimp paste, shallots, and garlic until smooth.

Heat a little oil in a pan over medium heat and sauté the blended mixture until it becomes fragrant.

Add the beef cubes to the pan along with enough water to cover the meat. You can use the water from cooking the meat if desired. Cook until the beef is tender.

Slice the large red chilies and tomatoes, then add them to the pan along with the papaya flowers. Stir in the sugar, salt, and Royco seasoning to taste. Cook until the liquid has reduced and thickened slightly, and the flavors are well combined.

Taste and adjust seasoning if necessary. Once the dish is ready and the liquid has reduced to your desired consistency, remove from heat.
