Potato Beef Pepper Delight
Ingredients:

- 1/2 kg beef, thinly sliced
- 2 large potatoes
- 1 lime, juiced
- 8 small Thai chili peppers
- 4 shallots
- 4 cloves garlic
- 4 candlenuts
- Whole black peppercorns
- 2 tablespoons oyster sauce
- 2 tablespoons margarine
- 1 tomato
- 1 large onion
- 1 thumb-sized piece of ginger
- Salt, to taste
Instructions:
-
Prepare the Ingredients: Begin by gathering all your ingredients and prepping them accordingly.
-
Season the Beef: Coarsely grind the black peppercorns. Thinly slice the beef and coat it with the ground pepper and salt. Squeeze the lime juice over the beef and let it marinate in the refrigerator for at least 30 minutes.
-
Prepare the Spice Paste: Blend the Thai chili peppers, shallots, garlic, tomato, ginger, and candlenuts into a coarse paste. Slice the onion into thin strips and set it aside.
-
Fry the Potatoes: Cut the potatoes into your desired shape and fry them until golden and crispy. Set aside. (Optional: You can also add sausages to the potatoes for extra flavor.)
-
Cook the Beef: After the beef has marinated, bring a pot of water to a boil and cook the beef for 20 to 30 minutes until tender.
-
Sauté the Aromatics: Heat the margarine in a pan over medium heat. Sauté the sliced onion and the prepared spice paste until fragrant and golden.
-
Combine Ingredients: Add the cooked beef to the pan and mix well. Pour in some water to help the flavors meld and cook until the liquid reduces. Stir in the fried potatoes (and sausages, if using) and add the oyster sauce. Stir to combine and cook until everything is well mixed and heated through.
-
Serve: Turn off the heat and your Potato Beef Pepper Delight is ready to serve. Enjoy the sweet and spicy flavors of this hearty dish!
