Beef Offal in Spicy Chili Sauce
Ingredients:
- 250 grams of beef offal, boiled and cut into pieces
- 5 shallots, thinly sliced
- 5 kaffir lime leaves, thinly sliced
- For the Spice Paste:
- 3 cloves of garlic
- 3 curly red chilies
- 2 bird’s eye chilies (red)
- 1/4 of a tomato
- A pinch of turmeric (about the size of a fingernail)
- Salt, to taste
- Granulated sugar, to taste
- 5 tablespoons of oil
Instructions:

Prepare the Spice Paste:
- In a blender or food processor, combine the garlic, curly red chilies, bird’s eye chilies, tomato, and turmeric. Blend until you have a smooth paste.

Cook the Shallots and Spice Paste:
- Heat 5 tablespoons of oil in a pan over medium heat. Add the sliced shallots and the spice paste. Sauté until the shallots are translucent and the paste becomes aromatic.

Add Kaffir Lime Leaves:
- Incorporate the sliced kaffir lime leaves into the pan, stirring well to combine with the spice mixture.

Add Beef Offal:
- Add the cut beef offal pieces to the pan. Stir and cook for a few minutes to allow the flavors to meld.

Simmer:
- Pour enough water into the pan to cover the beef offal. Stir to combine, then cover the pan with a lid. Reduce the heat to low and let it simmer until the water has reduced and the beef offal is tender.

Season to Taste:
- Taste the dish and adjust the seasoning with salt and granulated sugar, as needed. Increase the heat and stir occasionally until the sauce thickens and the water is mostly evaporated.

Serve:
- Once the sauce has thickened and the flavors are well combined, remove from heat. Serve the beef offal warm, garnished with additional fresh herbs if desired.
