Sautéed Beef Skin and Tofu (Oseng-Oseng Kulit Sapi & Tahu)

Ingredients:

  • 500 grams beef skin
  • 4 blocks of tofu
  • 2 pieces of petai (sliced according to preference)
  • 5 shallots
  • 2 cloves of garlic
  • 1/2 onion
  • 7 green chilies
  • 5 red chilies
  • 4 bird’s eye chilies (optional for extra heat)
  • 1 bay leaf
  • 2 kaffir lime leaves
  • 1 tablespoon oyster sauce
  • Soy sauce, salt, and sugar to taste

Instructions:

  1. Prepare the Beef Skin:

    • Boil the beef skin for 5-7 minutes until tender. Drain thoroughly and coat with a light layer of cooking oil to prevent sticking.
  2. Sauté Aromatics:

    • Heat a little oil in a pan over medium heat. Add the shallots, garlic, onion, bay leaf, and kaffir lime leaves. Sauté until fragrant and the onions turn translucent.
  3. Add Chilies:

    • Slice the green chilies, red chilies, and bird’s eye chilies. Add them to the pan, stirring briefly to release their flavors.
  4. Combine Ingredients:

    • Introduce the boiled beef skin and tofu blocks to the pan. Stir well to combine with the aromatics and chilies.
  5. Season and Cook:

    • Pour in the oyster sauce and a splash of soy sauce. Season with salt and sugar according to taste. Mix thoroughly and cook for a few more minutes until all ingredients are well incorporated and heated through.
  6. Serve:

    • Once everything is well-mixed and heated, remove from heat. Transfer to a serving dish and enjoy warm.

This recipe brings together the delightful textures of beef skin and tofu, seasoned with a medley of aromatic herbs and spicy chilies, making for a savory and satisfying dish perfect for any meal.
