Spicy Stir-Fried Beef with Carrots in Oyster Sauce

Ingredients:

  • 1.5 kg beef, sliced thinly
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 thumb-sized piece of ginger, smashed
  • 2 kaffir lime leaves
  • 1 stalk lemongrass, bruised
  • Salt, to taste
  • Oyster sauce, to taste
  • Sliced carrots (optional)
  • 2 red chilies, sliced
  • 2 green chilies, sliced
  • 5 bird’s eye chilies
  • 1 tomato, chopped
  • English soy sauce, for marinating

Instructions:

  1. Marinate the Beef: Start by marinating the sliced beef in English soy sauce and oyster sauce for about 1 hour. This will help the flavors penetrate the meat.

  2. Prepare the Aromatics: In a large skillet or wok, heat some oil over medium heat. Add the minced garlic, chopped onion, and smashed ginger. Sauté until fragrant and the onions become translucent.

  3. Add Vegetables: If you are using carrots, add them to the skillet along with a splash of water to help them cook. Stir occasionally until they begin to soften.

  4. Cook the Beef: Increase the heat to high and add the marinated beef to the skillet. Stir-fry until the beef is browned and cooked through.

  5. Flavor the Dish: Add the oyster sauce, salt to taste, chopped tomato, sliced red and green chilies, and bird’s eye chilies. Continue to stir-fry for a few more minutes until the tomato has softened and all the ingredients are well combined. Adjust the seasoning if necessary.

  6. Finish and Serve: Once everything is well-cooked and flavorful, turn off the heat. Transfer the dish to a serving plate. Serve hot with steamed rice or as part of a larger meal.
