Coriander powder 1 tsp

Instructions:

  1. Prepare the Ladyfinger (Bhindi)
    Start by washing and cleaning the ladyfingers thoroughly. Once cleaned, dry them using a kitchen towel. Cut the upper ends of the ladyfinger and make four slits down the length of each piece, ensuring you don’t cut them all the way through.

  2. Cook the Ladyfinger
    Heat a tablespoon of oil in a large pan or skillet. Add the prepared ladyfinger to the pan along with a pinch of salt. Sauté them over medium heat until they are cooked and slightly browned. Cover the pan to help them soften. Stir occasionally to prevent burning. Once the ladyfingers are cooked and tender, turn off the heat and set them aside.

  3. Make the Tomato Puree
    While the ladyfinger is cooking, blend the chopped tomatoes with a small amount of water to make a smooth puree. Set this aside for later use.

  4. Prepare the Onion-Ginger-Garlic Paste
    In a blender, combine the chopped onion, ginger, garlic, green chillies, cloves, cardamom, cinnamon, and mace. Grind them into a smooth paste and set aside.

  5. Cook the Gravy
    Heat 2 tablespoons of oil in the same pan. Add a bay leaf and cook it for about 10 seconds. Then, add the prepared onion-ginger-garlic paste to the pan. Sauté the paste for 2-3 minutes until it turns golden brown and releases a pleasant aroma.

  6. Combine the Gravy with Ladyfingers
    Once the paste is ready, add the tomato puree to the pan and cook for about 5 minutes, allowing the gravy to thicken slightly. Add the turmeric powder, red chilli powder, and coriander powder, and mix well. Stir occasionally to avoid sticking.

  7. Add the Ladyfinger
    Now, carefully add the sautéed ladyfinger to the gravy, increase the heat slightly, and stir gently to combine everything. Cook the mixture for another 1-2 minutes, allowing the ladyfingers to absorb the flavors of the spices.

  8. Final Touches
    Sprinkle kasuri methi (dried fenugreek leaves) over the gravy and give it a final stir. Turn off the heat and garnish with fresh coriander leaves.
